Asian Green Been Salad

Soba Noodle Salad

I have gotten really into healthy cooking in the past six or so months, so I decided my blog might be a good forum to post some of the healthy recipes i find and/or create. Enjoy! This one is delicious. The picture is from the last time I made the dish.

Asian Green Been Salad:


3 Ounces of uncooked linguine (or vermicelli, or as i like to use, soba noodles)
1 lb green beans, trimmed.
2 cups diagonally sliced celery
1 cup thinly sliced red bell pepper
1/2 cup (1/2 inch thick) slices green onions
1/3 cup chopped fresh cilantro

1/4 cup rice wine vinegar
1/4 cup low sodium soy sauce
2 tablespoons dark sesame oil
2 teaspoons grated peeled fresh ginger
1/2 teaspoon sugar
1/4 teaspoon freshly ground black pepper
3 cloves of garlic, minced.
1 red jalapeno pepper, seeded and finely chopped (about 1 tablespoon)

1) to make the salad: cook pasta and add the beans to the water the last 3 minutes of cooking. drain and rinse in cold water, drain again. Place mix in a large bowl. Stir in celery, bell pepper, onions and cilantro.

2) to make the dressing, combine vinegar and remaining ingredients in a small bowl; whisk until blended. Add to salad, toss well, cover and chill.
Yields approx 8 servings. (serving size is 1 cup)
